No Copyright Infringement Intended Filipino halo halo Serving size: Serves 4 Cuisine type: Asian Cooking time: More than 2 hours Course: Dessert Favourite flavours: Easy recipes Filipino halo halo INGREDIENTS 400ml can coconut milk 2 tablespoons honey 80g sweetened jack fruit, drained and chopped 75g sweetened kidney beans, drained 90g baby coconut, drained 90g sweetened palm fruit, drained 1 cup finely chopped rock melon 1 cup chopped mango 1 cup chopped paw paw 1/3 cup reserved syrup fresh passionfruit and ice-cream, to serve METHOD In a small saucepan warm coconut milk. Add honey and heat gently until honey dissolves. Pour into Asian ice shaver mould and set according to manufacturers instructions or alternatively pour into a lamington pan and place in freezer until just set. Break up the mixture with fork and refreeze. Divide jack fruit, kidney beans, baby coconut, palm fruit, rock melon, mango and paw paw amongst four large cocktail or port glasses. If using ice shaver, shave the required amount of ice following the manufacturer's instructions; otherwise, scrape frozen coconut milk using a metal spoon. Top each dessert with shavings and serve with reserved syrup, fresh passionfruit and ice cream. Serve immediately.
