Morcon Recipe

Ingredients
2 kilo beef, sliced as morcon 3/4" thick, in one piece
4 tbsp. calamansi or lemon juice
1/2 cup soy sauce
8 pcs sausage or ham, cut into 4 diagonally
4 pcs sweet gherkins or 8 sweet pickles, cut in thin long strips
4 hard cooked eggs, sliced
200 grams cheddar cheese, cut in strips
1 pc carrot, cut into long strips
6 slices bacon
4 tbsp flour
1/2 cup cooking oil
6 pcs bouillon cubes dissolved in 6 cups boiling water
1/2 tsp salt
 



Instructions
Marinate beef in calamansi juice and soy sauce. Arrange strips of vienna sausage, sweet gherkins, hard cooked eggs, cheese, carrots and bacon on marinated beef. Roll neatly and tie with string. Dredge in flour then brown in hot cooking oil. Transfer to a big saucepan. Add bouillon water. Season with salt. cover and simmer until beef is tender. slice, arrange in a platter. Pour sauce on top. Garnish with sprigs of parsley. Serves 20
