Steamed Fried Rice

 Ingredients
2 cloves garlic, minced
6 cups cooked rice
2 tbsp. oil
1 tsp. sesame oil
salt, vetsin, pepper to taste
2 beaten eggs
*Heat oil. Add minced garlic and fry until brown. Add cold rice. Fry for a few minutes on low flame and add beaten eggs while tossing the rice all the time.

MEAT MIXTURE:
1/2 cup diced chicken meat
1/2 cup diced pork loin
1/2 cup shrimps, peeled
1/4 cup diced chicken liver
1/4 cup diced onions
1/4 cup soaked winter mushrooms
2 tbsp. frozen peas or minced green onions

MARINADE:
1 tsp. rock salt
2 tsp. chinese wine
1 tbsp. cornstarch
2 tsp. sesame oil
vetsin and pepper to taste
*Dredge meat abd shrimps in marinade for 1 hour

SAUCE:
2 tsp. light soy sauce
2 tsp. dark soy
2 tsp. sugar
2 tsp. sesame oil
2 tbsp. cornstarch
salt, pepper, vetsin to taste
1 1/2 cup water
 



Instructions
Deep fry shrimps and meat mixture. Drain and set aside. Saute onions. Set aside.

Reheat frying pan with 2 tbsp. oil and add fried meat and mushrooms and sauce. Bring to a boil. Blend in cooked onions and peas.

Place fried rice in large tureen or individual bowls and top with meat mixture. Steam for 5 minutes.

Serve hot.
